In today's Blog, Feather and Barb founder, Jess Brice shares with us one of her all-time favourite recipes - Protein Pancakes.  Enjoy!

Whenever possible, eating at home is always my preferred option.  Firstly, its much cheaper, and secondly, you know exactly what goes into what you are eating.  Life is busy, I get it, but taking a little bit of extra time to have a fridge stocked full of wholesome food and some super easy and quick recipes on hand will put you on the front foot.  I work a lot of early mornings and nights, so if things aren’t ready to go or quick to make, bad things can happen.  

I want to share with you one of my all-time favourite at-home breakfasts - protein pancakes!  I make these weekly and my kids still think that this is what pancakes are (they're 8 and 6!).  Packed full of good stuff, no nasties and will keep you full all morning.  They are also super quick to make and any extras will keep in the fridge to be reheated later for snacks or the next day for breakfast. So here is my recipe!  I would love to know what you think and I hope you love them just as much as I do.

Protein Pancakes

Recipe

1 cup oats

1 ripe banana

200g cottage cheese

4 eggs

Tspn cinnamon 

Tbspn chia seeds (optional)

Method

Place all ingredients in a blender and mix to form a pancake batter.  Cook like ordinary pancakes in a pan with a little coconut oil. Serve with your choice of toppings.  My favourite is crunchy peanut butter, coconut yoghurt, berries and a little maple syrup.  Enjoy! xx
